Masala is a fundamental part of nearly every savoury Indian dish. It is a basic mixture of fried onions, garlic, ginger and tomatoes

You can transform your leftover roast chicken, just by adding it to a pan with some masala, water and spices to make a delicious chicken curry…

It is a great idea to make lots of masala and freeze it in ice cube trays, or freezer bags. Personally, I like to freeze mine in ice cube trays, because that way it is already portioned out!


The amount of ingredients you use depends on how much you are making, but I tend to split them into the following fractions:

  • 1/10 fresh crushed garlic
  • 1/10 fresh grated ginger
  • 1/10 fresh diced tomatoes
  • 1/10 tomato passata
  • 6/10 diced red onions


  1. Add some oil into a karahi or pan, and add in the garlic and ginger. Sautee these until they gain a golden brown colour
  2. Then, add the onions and sautee until they soften and brown
    1. Next, add the tomatoes, then after 2-3 mins add the passata and stir until the mixture has thickened considerably, then transfer to a container or use immediately in any curry…
