Vegetable Cannelloni

Cannelloni is one of my most favourite pasta dishes, and it is so easy to make. Make sure you buy cannelloni tubes, otherwise your cannelloni will not taste the same!


  • 1 aubergine
  • 125 ml olive oil
  • 225 g spinach
  • 2 crushed garlic cloves
  • 1 tsp ground cumin
  • 12 cannelloni tubes
  • 50 g sliced mozzarella cheese
  • salt and pepper to taste

For The Tomato Sauce:

  • 1 tbsp olive oil
  • 1 finely diced red onion
  • 2 crushed garlic cloves
  • 500 g carton of tomato passata
  • a handful of fresh chopped basil


  1. Finely dice the aubergine. Then heat the oil in a frying pan, add the aubergine and cook for 2-3 minutes
  2. Add the spinach, garlic and cumin to the pan. Season with salt and pepper and cook for 2-3 minutes, stirring. Spoon the mixture into the cannelloni tubes and place in an oven proof dish
  3. To make the sauce, heat the olive oil in a saucepan and sautee the onion and garlic for 1 minute. Add the tomatoes and chopped basil, bring the sauce to the boil. Then reduce the heat and simmer for 5 minutes. Pour the sauce over the cannelloni tubes.
  4. Arrange the sliced mozzarella cheese on top of the sauce and cook in a preheated oven at 190 degrees for 30 minutes until the cheese is bubbling and golden brown.
