Best Ever Chocolate Brownies

  • 175 g butter (cubed)
  • 150 g good quality dark chocolate
  • 3 eggs
  • 300 g caster sugar
  • 75 g plain flour
  • 40 g cocoa powder
  • Icing sugar (to dust)


  1. Melt the butter and chocolate together in a bain marie , when the mixture is smooth, lift the bowl off of the pan and set it aside to cool for around 20 minutes
  2. Preheat the oven to 160 degrees Celsius and line an 8 inch square tin
  3. Using a handheld whisk beat the eggs and sugar together until thick and mousse like
  4. Add the melted chocolate mixture to the egg bowl and fold the two together. Then, sift over the flour, cocoa powder and a pinch of salt, and fold these together
  5. Transfer the mixture into the tin, level it off and bake for 30 minutes or until there is no wobble left when you shake the tin.
  6. Cool this completely and then dust with icing sugar and cut into squares
