Spinach and Ricotta Canapes

These delightful spinach and ricotta canapes are ever so easy to make, and taste delicious! This recipe uses shop bought filo pastry, however you can make your own. To keep the filo pastry moist, cover with a damp tea towel.

Ingredients:

  • 500 g spinach leaves
  • 200 g ricotta cheese
  • 5 sheets of filo pastry
  • 2 crushed cloves of garlic
  • a little butter
  • salt and pepper to taste

Method:

  1. Preheat the oven to 180 degrees Celsius
  2. Cut out circles from the filo pastry sheets (layered together)
  3. Place the discs into the muffin tray, to create the muffin cases
  4. Bake these cases in the oven for approx. 6 minutes until golden brown
  5. Meanwhile, In a pan melt the butter and add the spinach, ricotta, garlic, salt and pepper until the spinach is wilted
  6. Take the cases out of the oven and fill with the spinach and ricotta filling, then place back in the oven for another 5 minutes
  7. Serve hot or cold…
