Red Velvet Cupcakes

First of all I would like to apologise for not posting in a while; mainly due to exams…  😐   Well, at least they’re over now!!! Those who follow me on Instagram (@shaun_bhatia) would have seen these cupcakes…and would have probably noticed my obsession for them 🙂 Anyway, these red velvet cupcakes are absolutely divine… my absolute favourite, I would call them the King of Cupcakes…lol….! This recipe makes 12, but if you need more…or less for that matter (why would anyone want less…)lol…..just divide or multiple the recipe up in the required ratio.

A simple cream cheese frosting (recipe coming soon…) is certainly a necessity to adorn these cupcakes…I like to ‘blob’ it on top with a large round nozzle attached to a piping bag. Then sprinkle them with some white chocolate stars for a simple yet elegant look…

Without further delay, here’s the recipe:

  • 116g Self raising flour
  • Cocoa powder
  • 125g Caster sugar
  • 1/4 tsp of table salt
  • 135g unsalted butter at room temperature
  • 2 Eggs
  • 2 tbsp buttermilk
  • 1tsp red food colouring paste
  • 1/4 tsp of vanilla extract
  • 1/4 tsp Bicarbonate of soda
  • 1/2 tsp of vinegar

  1. First of all sift the flour, cocoa, sugar and salt into a large mixing bowl
  2. Then add in the butter and the eggs, and mix this together
  3. In a separate small bowl whisk together the red food colouring, buttermilk and vanilla until the red colouring is evenly distributed
  4. Then add this mixture into the large bowl, and mix together thoroughly (again, so that the colour is evenly distributed)
  5. In another small bowl add the the bicarbonate of soda and the vinegar so that a fizzinng reaction occurs…then add this into the large bowl…mixing it in
  6. Divide the mixture into 12 cupcake cases…I like to use a tablespoon so that I get an even batch
  7. Bake the cupcakes in a preheated oven at 170 degrees celcius fan for 20-22 minutes
  8. Leave to cool, and then decorate the cupcakes with cream cheese frosting
  9. Enjoy (to share…or not to share) lol….
